Upon successful completion of this course, you will be able to:
- Identify current evidence-based nutrition research and information to describe the components of plant-based diets that promote well-being and reduce the risk of disease
- Discuss what influences our food choices and why we make certain food choices when selecting food to incorporate in our diet
- Apply plant-based nutritional knowledge to selecting foods to incorporate in plant-based diets
- Identify how to select, purchase and prepare plant-based foods

Each week you will engage in a discussion question that examines evidence-based research and apply what you are learning to diets. The course concludes with a project-based assignment that assists you in the implementation of a plant-based diet.
