Course Description
Explore the environmental impacts of food production. By studying how different types of diets impact the environment, you will gain an understanding of the reasons why plant-based diets are believed to have protective effects on the planet and climate change.
What can you expect from this course?
Each week you will be introduced to the main topics and subtopics through instructor presented content, reliable and current research, and expert guest speaker videos. Opportunities for you to engage in a weekly discussion with your peers and instructor will allow you to learn from their experiences and expertise and further deepen your knowledge. The week ends with a reflection activity that prepares you for the project-based assignment.

Upon successful completion of this course, you will be able to:
- Identify the environmental impacts of food production
- Recognize the effects of different types of diets on the environment
- Evaluate the impact of plant-based diets on the planet and climate change and explain how they can contribute to the reduction of greenhouse gases
- Outline strategies that encourage dietary change and how these changes impact the adoption of plant-based diets
